2018 Dandelion Vineyards Pride of the Fleurieu Cabernet

South Australia Fleurieu Peninsula Cabernet Sauvignon

Vineyard: The vineyard is hand managed and monitored to source the best quality the vineyard can deliver. Located in the hills of the Fleurieu, overlooking the Finniss River wetlands. 

Season: A superb season recorded with good winter rains recharging water sources for an ideal start to the growing season. An unexpected 'black' frost occurred late spring, which disappointingly reduced overall fruit production. A warm December and growing season resulted in wine grapes of deep concentration and exceptional Cabernet fruit; a region famous for delivering outstanding Cabernet.

Wine making: Hand picked by family and friends and transferred to open top fermenters. After 14 days the juice was gentle basket press to new and seasoned French oak barriques for a further aging of 18 months. The finished wine remained un-filtered and un-fined. 

Appearance: 'A dinner-jacket in velvet suit' Zar Brookes. Deep, dark red with slight purple lift.

Aroma/Bouquet: The faintest aroma of French oak with an crescendo of forest berries with nuances of fresh herbs and capsicum.

Palate: Concentrated sweet but not over ripe fruit, intertwine a palate of luscious dark berries, black current liqueur and dark chocolate. A delightful savory finish; the tannin is fine and gripes at the finish but...that's the joy of Cabernet.

Food Pairing: A versatile wine for many cuisines. Smoked Italian sausage and bean stew, Argentinean beef barbecued on the bone.
