Barossa Valley Cabernet Sauvignon

Vineyard: The old vine Cabernet vineyard is hand managed and nurtured throughout each season. Located between Seppeltsfield and Marananga; a premium vineyard region of the Barossa which is grown on red clay.

Season: Generous late winter rains replenished the soil profile followed into Spring. Consistent warm summer days, with cool nights allowed for ideal  slow ripening. The vintage will be long remembered as an exceptional one.  

Wine making: Hand picked by family and friends and transferred to open top fermenters. After 12 days the juice was gentle basket press to new (30%) and seasoned French oak barriques for a further aging of 14 months. 

Appearance:  Deep, dark purple 

Aroma/Bouquet: Concentrated blueberries with a mixture of red and black forest berries. A lure of red dust and peppery notes.  

Palate: Concentrated blue and blackberries, black current liqueur and bitter dark chocolate. The tannins are strong and grip the palate for a long and savoury finish.

Food Pairing: A versatile wine demanding of food with strong flavours. Smoked sausage, Mushroom & Aubergine ragu, slow cooked beef cheeks.
