McLaren Vale Shiraz/Riesling
Vineyard: Cutting edge viticulture teamed with exceptional wine making has delivered a superb wine from the South Australian McLaren Vale region. The vineyard is constantly monitored and managed to deliver premium grapes.
Season: Winter rainfall was average with soil moisture wet at the time of budburst - spring. Spring rains were low with many vineyards accessing other sustainable water sources. The summer season delivered cool evenings and warm days without excessive heat. Overall low yields but a very good vintage was noted.
Wine making: 95% Shiraz, 5% Riesling. Whole bunches were hand picked and fermented on stalks in open top fermenters on top of Riesling skins for 11 days. Hand plunged twice daily, before a gentle basket press in new and seasoned French oak barriques. After 18 months of maturing and racking, was then bottled (unfiltered).
Appearance: Dark, dark red with purple hue.
Aroma/Bouquet: A lifted bouquet with the dash of Riesling. There are hints of spice and anise, amongst sweet ripe red berries.
Palate: Sweet, luscious fruit on the mid palate, with powdery mineral notes create a solid structure. There is an incredibly deep range of flavour, a mix of red and black berries complimented by vibrant pepper and leaf notes. Elegant tannins and lingering acidity help extend the finish and the overall balance is impeccable.
Food Pairing: Perfectly matched with all full flavoured foods such as Chicken liver Pate and crusty Ciabatta, Taggine of Lamb shoulder and harissa, or an assortment of field mushrooms over risotto.

Wine making: Hand picked fruit was carefully sorted before gentle pressing. The juice was captured in open fermenter tanks, with gentle hand plunging for 12 days. Matured in French oak barriques for 18 months. Bottled un-filtered and un-fined.
Appearance: Bright violet-blue, with hints of deep dark red and purple.
Aroma/Bouquet: The aromatics and intensity is alluring. White pepper, nutmeg and a faint hint of bay leaf with seasoned oak nuances.
Palate: A luscious fruit driven palate with serious intensity and mouth feel are simply delightful. A touch of eucalyptus with clove, raspberry, red-currants and blackberries, finish to a savoury and full palate.
Food Pairing: Slow cooked ribs with lashings of chilli plum sauce, Tagine of Goat, lemon peel and oregano.

McLaren Vale Touriga/Tempranillo
Vineyard: Cutting edge viticulture teamed with exceptional wine making has delivered a superb wine from the South Australian McLaren Vale region. The vineyard is constantly monitored and managed to deliver premium grapes.
Season: Winter rainfall was average with soil moisture wet at the time of budburst - spring. Spring rains were low with many vineyards accessing other sustainable water sources. The summer season delivered cool evenings and warm days without excessive heat. Overall low yields but a very good vintage was noted.
Wine making: Hand picked fruit consisting of 60% Grenache, 25% Touriga and 15% Tempranillo was carefully sorted before gentle pressing. Once pressed the wine was then aged in new 20% and seasoned French oak barrels for 15 months.
Appearance: Bright violet-blue, with hints of deep dark red and purple.
Aroma/Bouquet: Dark boysenberry and blackberry fruits intertwine the juicy Grenache sweet characters. Slightly herbaceous with hints of rosemary and lavender. The perfume is long and lingers with gently oak and spice.
Palate: This is a robust red wine full of flavour and savory tannins. Imagine an assortment of licorice, violets and wild strawberries that explode in your palate and gentle disappear to the back of your palate.
Food Pairing: Seafood Paella, char-grilled octopus and artichoke salad.

Wine making: Hand picked fruit was carefully sorted before gentle pressing. The juice was captured in open fermenter tanks, with gentle pump overs to extract maximum colour, flavour and tannin. Aged in new and seasoned American and French oak barrels for 16 months.
Appearance: Bright violet-blue, with hints of deep dark red and purple.
Aroma/Bouquet: White pepper, nutmeg and bay leaf dance around blue fruits with obvious raspberry and plum jam. The aromatics and intensity is alluring.
Palate: A silky texture from front to mid palate, before a slight blast of acidity. There is concentration and a good depth of fruit in the back palate, with grainy tannins and a seamless finish.
Food Pairing: Slow cooked ribs with lashings of plum sauce, Beef and green chilli stew.

McLaren Vale Touriga
Vineyard: Cutting edge viticulture teamed with exceptional wine making has delivered a superb wine from the South Australian McLaren Vale region. The vineyard is constantly monitored and managed to deliver premium grapes.
Season: The growing season kicked off to a good but slightly drier start than previous years. This followed into summer proving challenging with overall fruit production quantities. Frost and disease pressure was low, with a few damaging hail storms causing slight scaring on the wine grapes. January to February recorded some extreme hot temperatures which enabled a generous ripening, with small grape bunches reaching maximum concentration and flavour.
Winemaking: Hand picked fruit was carefully sorted before gentle pressing into open fermenters. Basket pressed and matured in French oak barriques from bespoke coopers.
Appearance: Bright violet-blue, with hints of deep dark red and purple.
Aroma/Bouquet: The aroma is an astonishing abundance of pen ink, graphite, mineral and ironstone. The fruit captures sweet nuances of lavender with plum and tangerine skins.
Palate: A textural and delightful balance of acid and tannins. Luscious, sweet, blue and red fruits such as mulberry, blueberry and cranberry greet your palate before a powerful and rewarding, savoury long finish.
Food Pairing: Char-grilled scallops, chorizo and white bean stew.

McLaren Vale Grenache
Vineyard: Cutting edge viticulture teamed with exceptional wine making has delivered a superb wine from the South Australian McLaren Vale region. The vineyard is constantly monitored and managed to deliver premium grapes.
Season: The growing season kicked off to an extremely dry start, one of the driest in over 50 vintages. This resulted in low soil moisture to begin the growing season. With budburst off to a good start flowering was in abundance; but due to high windy conditions limited flowers set, leaving less flowers to be able to form generous bunch formations. The summer season continued to be dry but cool evenings were a welcomed site which developed wine grapes with natural high acidity and deeply concentrated colours with delicious sweetness when ripe.
Winemaking: Hand picked fruit was carefully sorted before gentle pressing into open fermenters. Basket pressed and matured in French oak barriques from bespoke coopers.
Appearance: Clean dark purple, with hints of deep dark red.
Aroma/Bouquet: Lifted aromatics of cherries and delicate confectionery. The red colour is vibrant with plush ripe red berry fruits. Hints of black pepper with musk nuances and earthy, exotic aromas in the background.
Palate: Plush, generous and very mouth filling. The acidity and tannin dance around a mixture of red fruits to leave a delicate finish.
Food Pairing: Char-grilled Chorizo and white bean stew, Antipasto, Italian cuisine, just to name a few.
