Winemaking: Not Your Grandma’s Rosé is made as a true rosé (picked earlier than typical red wine). 65% of the blend is old vine Grenache which is co-fermented with 25% of old vine Mourvèdre/Mataro. The remaining 10% is an aromatic blend of Riesling, Gewürtztraminer, and Weißer Herold; also known as the Kerner grape variety.
Appearance: Pale Salmon colour
Aroma/Bouquet: Strawberry, musk and Turkish delight aromas waft from the glass. It's enticing from the beginning with mouth-watering fresh berries and slight notes of white pepper.
Palate: Delicate, light, dry and crisp wine with a hint of spice and touch of candied toffee apples on the finish.
Food Pairing: Seafood, Pork belly and a lathering of charcuterie with chargrilled vegetables of the season.

Barossa - Eden Valley Grenache Rosé
Vineyard: At the end of our old-vine garden path there is a Fairytale come true, Carl Lindner’s 85 year old bush vine Grenache garden in the Barossa.

Winemaking: After hand picking in the last week of March, winemaker Elena Brooks let the free run basket pressed juice ferment with natural indigenous yeasts in old French Oak barriques. The wine sat on yeast lees for twenty weeks before bottling without secondary fermentation, fining or filtration to capture the essence of our Fairytale.
Appearance: True translucent, lightly coloured, free-run salmon or Fairytale pink with unadulterated orange onion skin hues.
Aroma/Bouquet: Pure Grenache sweet n’ sour aromatics: the best of the variety’s juicy fruit combined with the best of the variety’s languid, gruff spice. Bath salts, lavender, roses, and the stoney, sandy ground of the vineyard just before rain.
Palate: A drying raspberry entry followed by more raspberries. Fresh and zingy with a long palate that really saturates your tastebuds with flavour.
Food Pairing: Enjoy chilled & pair with spicy cuisine, shell fish or a rich and creamy Mushroom Risotto.

Barossa - Eden Valley Riesling
Vineyard: Dandelion Vineyards are proven plantings that have stood the test of time. The goal is to nurture the unique character of these vineyards and express their terroir in these wines.
The Enchanted Garden was planted in 1910 and thrives to this day, a 7 acre Eden Valley Vine Garden lovingly tended by Sue and Stuart Woodman.
Season: Exceptional quality was achieved from the 2020 vintage but extremely limited quantities produced, due to below average rainfall. Late frost combined with wet and windy conditions resulted in a poor flowering, with decreased berry set in bunch formations. From December the dry and windy conditions persisted, making the 2020 one of the driest and low yielding vintages on record.
Despite challenging conditions, the Eden Valley region delivered wine grapes of exceptional quality with white grapes showcasing an abundance of aromatics and both red and white grapes delivering excellent ripeness, concentrated colour and high natural acid levels.
Winemaking: Whole bunches were handpicked on the 9th of March then de-stemmed without crushing the fruit to fill our press exactly. Juice from the free run and pressings were separated then fermented in small tanks between 11 and 13 degrees Celsius. The wine has a high level of natural acidity, and although bone dry, only 11.5% alcohol.
Appearance: Star bright in colour the appearance of this Riesling foretells the pristine and unalloyed quality of its fruit.
Aroma/Bouquet: With classic Riesling aromatics of citrus zest, lemon foliage and hints of dragon fruit flowers, etched by a clear, steely minerality. This wine holds the promise of a future, well-cellared bouquet of honey, caraway and rye.
Palate: Bone dry with fresh citrus and crunchy acidity. Delicate notes of lemon rind intertwined with steely mineral flavours and soft bath salts.
Food Pairing: Enjoy with dumplings, spicy cuisine or South Australian King George Whiting.

Season: Exceptional quality was achieved from the 2020 vintage but extremely limited quantities produced, due to the lower than average rainfall recordings. A dry combination of all seasons was challenging with unfavourable winds disrupting vine fruit set and below average cool temperatures in the evenings. The summer season delivered the usual hot daily temperatures delivering a small but premium batch of fruit.
Winemaking: Whole bunches were carefully hand picked in the cool evenings and early mornings before small batches were gently crushed to capture the free run juice. The extracted juice was transferred into stainless steel tanks and bottled a few months later.
Appearance: Pale straw.
Aroma/Bouquet: An alluring brightness of mineral bath salts intertwine fresh rose water and delicate notes of geranium.
Palate: Clean and bright with a brace of acidity on the mid to back palate. A slight tartness like a crisp granny smith apple with a touch of citrus leaf. The texture is delicate with fresh and gentle acidity. This is a refreshing dry white wine which will develop an oily and mouth watering texture with bottle age.
Food Pairing: Enjoy with dumplings, spicy cuisine or South Australian King George Whiting.

Vineyard: Cutting edge viticulture teamed with exceptional wine making has delivered a superb wine from the South Australian Adelaide Hills region; Teakle's Hill at Woodside.
Season: A challenging season to say the least with a good a start to the growing season followed by unseasonably cold conditions not allowing development of vine flowers to set good fruit. Once calculated, fruit bunches were expected to be reduced up to 60%. With the ongoing dry conditions a once in a lifetime fire season destroyed many vineyards across the Adelaide Hills region. Depending on vineyard location, the cool climate altitude with cool evening breezes, allowed the white and red grapes to ripen with good flavours and high acidity.
Wine making: Whole bunches were carefully hand picked in the cool evenings and early mornings before small batches were de-stemmed and pressed. Free run juice was transferred into small stainless steel tanks and temperature controlled at 12-14 degrees Celsius. The wine was then bottled without fining and minimal filtration to maintain the purity of the Sauvignon Blanc fruit.
Appearance: Clear, to pale straw.
Aroma/Bouquet: Minerals and slate with granite highlights float across layers of gooseberries, fresh Nashi pear and slices of cucumber.
Palate: Clean, zingy and a bright palate is met with crisp acidity and mineral with lemon zest nuances. Tart gooseberries flavours intertwine through fresh summer berries with subtle sweetness for a refreshing white wine.
Food Pairing: Seared scallops in butter and sage herbs, fresh crusty baguette with pasta of crab linguine, shellfish with lemon wedges.
